How can I use and test Microsoft 365 copilot to see how it can help our work and use AI in our business?

I am 1 of the 2 admins that have Microsoft 365 E3 and Azure ad premium p1 licenses in my organization and I want to try out Microsoft 365 copilot first to see how it can help with our work in our business in Malaysia.

I have read about the Insider button in Word/Excel help button and followed the Microsoft site online guide to install the version that I can click to join after installing but no luck. Tried Bing Chat and Bard but none of them gave me solid information on how to do it.
