SharePoint migration tool, will it perform incremental upgrade?
and after migrating from local drive and one drive files to SharePoint online, how can migrate updated data from source? Please help me on this.

and also do we have any script to list out sites which are using custom templates? if yes please share.
in our environment 90 percent on premises sites are team sites, I assume these team sites not necessarily include custom templates, am I correct?

Hi @sns ,

After a migration task has completed, you can save it to be rerun at a later date, allowing you to copy only those new or updated files in the source location.

Whether to use templates in Team sites depends on your actual business needs, it is not necessary. In addition, does custom templates refer to list templates? AFAIK, it is not supported to use site template in SharePoint Online (modern sites) or SharePoint Server 2019 (modern sites).
