If you upgrade you will be running an unsupported scenario, this may or may not work as it has not been officially tested/verified by Microsoft, so you will have to use at own risk.
The reason why newer version of Azure AD Connect requires Windows Server 2016 or newer is due to the requirement of SQL Server 2019.
