Yes, BitLocker management in Configuration Manager could support full disk encryption
By default, the Enable BitLocker task sequence step only encrypts used space on the drive. This default behavior is recommended, as it's faster and more efficient. If your organization requires encrypting the entire drive during setup, then enable "Use full disk encryption" option in the Enable BitLocker task sequence step. Windows Setup waits for the entire drive to encrypt, which takes a long time, especially on large drives. As shown below:
