If you are using Autopilot, you can use a script like Michael Niehaus's to remove the apps https://oofhours.com/2020/05/18/two-for-one-updated-autopilot-branding-and-update-os-scripts/ or you can take a look at https://www.asquaredozen.com/2020/08/06/remove-windows-10-in-box-apps-with-configmgr-or-intune-and-the-microsoft-store-for-business/
Windows 10 Intune Image
We are going through a phase of joining our Windows 10 machines to Azure AD using Intune, I noticed that the default Windows 10 image contains a number of unwanted apps such as games and an incorrect version of Office apps, I am aware that you can install a clean version of Windows 10 but I do not know how to go about this, is anyone able to help?

As Nick mentioned using script to remove applications, it is also a good way to directly use autopilot reset.
IT admins or technical teachers can use Autopilot Reset to quickly remove personal files, apps, and settings, and reset Windows 10 devices from the lock screen any time and apply original settings and management enrollment (Azure Active Directory and device management) so the devices are ready to use. With Autopilot Reset, devices are returned to a fully configured or known IT-approved state. Please refer to:
