How do I set up Staff Availability in MSBookings so that we can schedule an appointment that spans across two days (according to the calendar's timezone)

I have a calender in Bookings which has Regional Settings set to EST.

One staff member works 7pm - 3am to cover APAC timezone.

We set up his availability as 7pm-11:30pm Sun / 12:00am - 3am Mon to account for AEST region working hours of 9am - 5pm.

We are unable to schedule a 2hr appointment in the Bookings calendar if it begins before midnight and ends after midnight.
When attempting to create a booking it comes up against his name that he is off work between 1:30pm - 2:00pm local time (AEST) - i.e. it seems that bookings does not recognise staff working in different timezones, so in his availability we must translate his availability into EST. It does not allow me to set his availability as 7pm - 12:00am Sun / 12:00am - 3am Mon - if I do this it comes up with a warning "The meeting hours aren't correct. Please check for overlappoing times or a start time that comes after an end time" and I am unable to save his Staff settings.

I have a global team that I am setting this up for - I cannot set the Calendar itself to be AEST timezone.

How do a fix this so that my customers can book meetings that span across days (per the regional settings of the calendar itself)?
