Hello,

Are there any plans new bindings for iOS 15 ( Xamarin.iOS 15 ) to be released soon so that existing apps can be rebuild and tested on the iOS 15 beta properly ?

You can find the XCode 13 (targeting iOS 15) for Xamarin.iOS in the https://github.com/xamarin/xamarin-macios repo:

New bindings of Xamarin.iOS generally drop shortly after Apple releases the non-beta version of XCode. How long depends on the changes that Apple makes between the final beta and release.

Check the xamarin-macios repo for roadmap information. There's a meta thread with info on XCode 13 support at https://github.com/xamarin/xamarin-macios/issues/12778

XCode 13 support is currently available in Visual Studio for Mac 8.10.10 (released today)
XCode 13 support should be available in the next update to Visual Studio. If you don't want to wait you can install the package out of band. Info on doing so is in issue 12778
