Hi all.
So after a LOT of frustration and trials. I finally found how to create, save & compose, using a template (NOT the "My Template" function with the lightning bolt, but an actual (formatted and files attached) template.

Now, next problem to solve... How do you use these in a reply to an email? Ie. I've gotten an email, and I want to reply with one of the saved templates with formatting/files etc. into the reply?

    I am actually running into a similar issue where I cannot directly select my saved template when trying to reply. I have found an alternative test method that: 

    In the toolbar, switch to the Home tab > Locate the New section > Select Mail from Template > Then, select your saved template > Next, copy all the content from the template that just opened > Paste the copied content into the reply body. 

    But personally, I’m totally agree and understanding the convenient of being able to copy and paste like this. In that case, I strongly suggest you go to post this idea in Ideas · Community. Microsoft product team is in charge of the site, and they constantly check customer reviews and feedback. The higher votes, the more attention the related team will pay on. And a lot of the features are developed and improved based on customer feedback.
