Outlook on MacBook Pro on Tahoe 26.1 no longer allowing me to send emails

In Outlook, if I click into Accounts and select the one I need, the wrong server information is in the Incoming and Outgoing server fields. However all the information (including the toggle switch which would allow me to edit the server information) is greyed out.

This is the latest version of Outlook, running on a Macbook Pro on the Tahoe 26.1 OS. This problem has been on-going for the last two weeks.
