What is the best tool to record an interview or conference via microphone at Windows 10

Question

I need to evaluate some application on windows which allow us to record the interview and/or conferences via headphone set with good quality.

If we used 'Voice Recorder', the meeting host cannot use headphone set as the voice is not integrated for two parties.

Does anyone have research before? Cloud-based solution is also ok. But for now, I am looking for a quick solution on desktop.
