Hi,
here is a simple guide to help fix the missing notes on your iPhone. Some notes stay in iCloud but the local ones disappear, so try these steps one by one.
First, check your account settings. Go to Settings, then Mail, then Accounts. Open each account and make sure Notes is turned on. Sometimes notes are saved under Gmail, Yahoo, or Exchange, and they will not show if the toggle is off.
Next, check the Recently Deleted folder. Open the Notes app, tap back until you see all folders, then open Recently Deleted. If you see your notes there, select them and move them back to another folder.
Try searching for the notes too. Go to the main folder view in Notes, pull down to show the search bar, and type a word that was inside the missing note. Make sure you search across all accounts. Sometimes notes are still there but in a different folder.
Also check all folders manually. Open every folder under iCloud, Gmail, or any other email account and scroll down. Notes can move or sync weirdly sometimes.
After that, update your device. Go to Settings, then General, then Software Update. Install any update available. Sometimes old software causes sync issues.
If your notes still do not show up, they might have been local only. Local notes do not sync with iCloud or email accounts. In that case, the only way to get them back is recovering from an iCloud backup or a device backup where the notes still existed.
