If you are referring to the Pages section (vertical or horizontal page tabs) of your OneNote notebook, unfortunately, you cannot hide or remove them entirely.

You can delete a page, but you cannot hide the page tabs themselves.

However, if you switch the page tab view from horizontal to vertical, you can temporarily hide the page tabs by selecting the three horizontal lines ☰ in the top-left corner of the notebook.
