Indeed, Insert Symbol is MIA at the moment. It is still available through the keyboard shortcuts Windows Key+. (period) and Windows Key+; (semicolon). It does appear that Insert Link is now available from the ribbon with the cursor in the body of a new email:

I have just spend 20 mins looking for it in the background and then i found out its behind a useless keyboard shortcut.
Fix it now! Stop breaking things that are fine!
Dont even get me started on not being able to insert links into new outlook emails. What a joke!!!
