I understand how frustrating this is when an adult account is incorrectly classified as a child because of a wrong birthdate.
If the Microsoft account shows a child age, the birthdate field is usually locked by design. To correct this, sign in to the account, go to Your info, and follow the section “I’m an adult, but Microsoft thinks I’m a child”, which guides you through the required age verification process; once verification is completed, the account is reclassified as an adult and child restrictions are removed.

If the page does not allow any changes or verification, the only supported option is to contact Microsoft Support so they can review the account status.
