Hello,
I have purchased a Windows 11 Home license on the official website to use with Parallels on my Macbook to realise now that I needed a Windows 11 Pro license.
When trying to activate the license I get an error message that it is not a valid license for windows 11 Pro.
Installing a new version of Window 11 Home and then do the upgrade is not possible with Parallels, so I need to get a new license, however I will not pay again for a full license for Window 11 Pro when I just purchased a Windows 11 Home license, so how can I upgrade this license key and just pay the difference?

The cheapest method to go from the Home to Pro version of Windows is to open the Settings App, then go to the activation settings.
Expand the 'Upgrade your edition of Windows' section.
Click the 'Open Store' button, and on the Store you can purchase the half price Home to Pro upgrade licence.
If that option is not suitable for you, this forum is just a user to user forum, you would need to try to contact Microsoft Support to ask them if it is possible to get a refund for the WIndows Home purchase and pay the difference to get a Pro licence.
