Contrary to what Abject Ignorance scraped up, Content Controls have not yet been provided in the Mac Office UI. They have to be created programmatically. Please see this article by John Korchok:

    Korchok-Content Controls

NOTE that keyboard shortcuts can be assigned to Content Controls which allows for them to be inserted but the features for defining & modifying them are not available. Also, documents which have Content Controls are fully operational but the controls cannot be modified in the Mac Office programs.

On Mac, content controls in Word are available on the Developer tab, but the Developer tab is hidden by default. Enable it first, then insert the controls.

    1. Show the Developer tab in Word for Mac
      1. On the Word menu, select Preferences.
      2. Select Ribbon and Toolbar > Customize the Ribbon > Main Tabs.
      3. Check Developer and select Save.
      4. The Developer tab will now appear on the ribbon.
    2. Insert content controls (Mac)
      1. Place the cursor where the control should go in the document.
      2. Go to the Developer tab.
      3. Choose the control to insert, for example:
        • Text Box (for user-entered text)
        • Check Box
        • Combo Box (drop-down list)
      4. After inserting, select the control and choose Options to configure properties such as list items (for combo boxes), macros to run on entry/exit, help text, and formatting.

Once the Developer tab is visible, all available content controls for Word on macOS will be accessible from that tab.
