Microsoft exchange 2013 slow mail delivery and slow server performance

We have some issues with our exchange server 2013.
I will try to explain our infrastructure to understand the issue better.
We have two mail servers and two client access servers, all virtuak machines on hyperV.
With 5 mailbox databases which are located in mailserver 2 (MX2).

One of our workers, shut down the MX2 VM while it was updating and deleted the VM from hyperV.
I recreates the VM using the previus vm disks, which worked but the performance of the server is slow, and the mail delivery is really slow.

So if you have any idea of any issue that we might have, or any workaround to check the configurement of the server if there is any issue with the configure.

    Recovering the VM like that is not supported with Exchange. - couldnt tell you at this point if its network or something got messed up with the restore, but the supported method at this point would be to build a new server and move mailboxes to it from the recovered one.

    You can monitor Exchange Server health with the native method.

    Step 1 - Monitor Server Availability and the Status of Exchange Services
    Step 2 - Monitor SMTP performance, CPU and Memory usage on an Exchange Server
    Step 3 - Track the Message Queue
