Based on Google’s current guidance, for a personal Gmail account, it is normal that you no longer see an “Enable IMAP” switch. The important part now is to force a fresh Google sign-in/permission prompt from Outlook on your laptop, because that is what recreates Microsoft’s access in your Google account.
On the laptop, close Outlook completely, then go to your Google Account Security page and, if shown, remove Microsoft apps & services access. After that, open Windows Credential Manager > Windows Credentials and remove the cached Google OAuth entries that start with MicrosoftOffice16_Data:OAUTH2 for that Gmail account.
Then open Outlook and add the Gmail account again so Outlook launches the Google sign-in window; when the Google permissions page appears, make sure you select Allow.
