Can I just install certain apps in 365 instead of everything>

Hello. Unfortunately no. It comes as a package. The only exception is when you install it on smart phone.

For Microsoft 365 for home subscriptions, the standard Click-to-Run installer always installs all the Office applications included with the product; it does not support choosing only certain apps during setup.

After installation, individual apps cannot be removed separately through the Office installer. Unused apps can be ignored or their shortcuts deleted, but the binaries remain installed.

To get only a specific app that is not part of the current product, a separate stand-alone license for that app can be purchased and installed, but this does not change the fact that the main Microsoft 365 suite installs as a whole.
