How do I switch from rear feed tray back to cassette?

There is no default Windows setting to change which tray your printer uses for printing, that is provided by the Canon printer driver.

Choose to print a document, then on the print dialog, select your printer model name, then click either Preferences or Properties

On that dialog, you should be able to change the paper source to your preferred tray.
