i tried deleting user data signing out of settings deleting the profile and making a new one but it keeps showing up

That email shows up because Microsoft Edge pulls it from your Windows account not from the Edge profile. Even if you delete the Edge profile or user data Windows still remembers any Microsoft account that was previously used on the device. Unless the account is completely removed from Windows or you are signed in with a local Windows account the email will continue to appear, and this is expected behavior by design.
Step 1 Remove the account from Windows completely Open Settings Go to Accounts Open Email and accounts Under Accounts used by other apps select that email and remove it
Then go to Access work or school If the email is listed there disconnect it
Step 2 Clear Windows stored credentials Press Windows key+R Type control keymgr.dll and press Enter Open Windows Credentials Remove every entry related to Microsoft Account or login.microsoftonline.com
Step 3 Sign out of Windows or reboot You must restart or sign out for the cache to actually clear
Step 4 Open Edge again Open Edge fresh You should now see either no email or a blank account picker Choose Start without your data

That email keeps appearing because Edge is picking it up from the Windows account and stored credentials, not just from the Edge profile. Remove it at the OS level and from credentials, then recreate the Edge profile.
Follow these steps on Windows 11:
MicrosoftAccount or login.microsoftonline.com that correspond to that email.If Edge still shows the account, repeat step 2 to ensure the account is not present anywhere under Windows Accounts, then remove and recreate the Edge profile again as described in the sign‑in troubleshooting steps.
