Based on your description, SharePoint did not save the latest version of your document, and the most recent version available is from Thursday instead of Friday. You wonder how you can recover the work completed on Friday.
Have you asked another colleague to open the file and confirm whether they can see a more recent version?
Was AutoSave enabled while you were editing on Friday, and did you notice any connectivity issues?
In the meantime, here are some suggestions you can try:
Check Version History
Go to the SharePoint document library where the file is stored (or open the file location via Teams > Files > Open in SharePoint)
Locate the document
Click … (three dots) > Version history
Look specifically for a version dated Friday
Open that version:
If it contains your missing pages, select Restore or Download a copy
Check SharePoint Recycle Bin
Go to the SharePoint site
Select Recycle bin
Look for: A similarly named file or a file deleted or modified on Friday or Monday
Restore anything relevant
Check Word AutoRecover / Unsaved Files
If you edited the file using Word desktop app
Open Word
Go to File > Info > Manage Document
Select Recover Unsaved Documents
Look for files dated Friday
