Differences in Description of Windows Version

In settings, under About, it describes my Windows version as OS build 26200.8655.

In System Information (msinfo32) it refers to it as Version 10.0.26200 Build 26200.

What's the difference? Which number should I quote when contacting app support? Or should I use the KB number instead?

Refer your system as Windows 11 26200, but if more detail is needed use 26200.8655. 26200 is a number of 25H2 build, 8655 is a sub-number that points to a latest installed update.
