Using New Outlook on Windows for personal email, calendar, and contact management

I understand how frustrating that would be. An all-day event should save correctly the first time, and repeatedly having to edit dates and settings just to get a single-day event saved is certainly not the experience you'd expect.
To help narrow down the all-day event issue further, could you please confirm:
- Which account type are you using in New Outlook (Outlook.com, Hotmail, Gmail, Yahoo, etc.)?
- Does the problem occur with every all-day event or only some events?
- If you create the same event in Outlook on the web, does it also become a two-day event?
In the meantime, regarding the all-day event changing into a two-day event, one possible cause is a calendar time zone or synchronization issue. Based on your description, I'd recommend checking the following:
- Open "Settings" > "Calendar" > "View" and go to Calendar View Settings in New Outlook.
- Verify that the correct time zone is selected.
- Create a new test all-day event on a future date and check whether it immediately displays as a single-day event before saving.
- If the issue persists, try creating the same all-day event in Outlook on the web and see whether the behavior is the same. This can help determine whether the problem is specific to the New Outlook app or affects the calendar account itself.
Regarding holiday calendars, Microsoft's documentation indicates that New Outlook uses holiday calendars that are added as separate calendars, rather than importing holidays directly into your existing primary calendar as Classic Outlook did.
