Hi,
By using the Approvals app in Microsoft Teams?

looking for a reminder for pending approvals or a pop-up notification when a new approval request is assigned.

Currently, notification at "Activity" Bell Symbol, assign approver might not notice the new approval request if the notification at "Activity" to many.

Based on your scenario, the standard Approvals app in Microsoft Teams does not provide automatic recurring pop-up reminders for pending approval requests.

However, the requester can manually send a follow-up notification to approvers who have not yet responded by using the "Follow up" option in the Approvals app. Microsoft documents this feature here:
