I clicked on Windows Update on my macOS desktop while working on a document, and it changed the format, and it is very hard for me to work this way. Can I revert to Word version 2602 build 19725.20190 that was downloaded back on March 18 of this year?

There is no native method available to roll back that Office update, you would need to uninstall Office using the steps provided on this link first:

Then, you can download the installer for your preferred version of Office by scrolling down the long list of Office versions on this link, I think the version you want is available in the February/March section of the table.
