I hand deleted the edge files having to change permission because microsoft in their infinite stupidity think that people who aren't tech illiterate want edge. I want this massive pile of hot garbage off my pc, chomium is a terrible engine, but more importantly IT OPENS STILL!! I took it off and I can open edge, granted I can't see any GUI in edge only the app shell but that is still WAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAY too much Microsoft Edge on my computer. I'm getting ready to delete everything with edge in the title but that is a hassle because Microsoft decided that you shouldn't be able to easily take off security vulnerabilities (I can't even delete it with my antivirus).

Edge is pushed via automatic updates, so uninstalling it is not going to do the trick. If you want to keep it off the OS, uninstall it again via appwiz.cpl and then proceed by modifying the registry using any of the methods below:
Run regedit.exe (you will need to be an admin).
Go to HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft
Right-click the Microsoft key (folder icon) > select New > select Key > name it EdgeUpdate
Right-click EdgeUpdate > select New > select DWORD 32-bit > name it DoNotUpdateToEdgeWithChromium and assign a value of 1
Alternatively, create a new text document on your desktop and append the name to change the .txt to .reg. Edit the new file and paste the following:
Windows Registry Editor Version 5.00
[HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\EdgeUpdate]
"DoNotUpdateToEdgeWithChromium "=dword:00000001
Save the file and double-click to import the new setting into the registry.
Finally, you can use the method outlined in the Blocker Toolkit.
Now, with all that said, Edge will eventually be "baked" into Windows 10 and removing it from OS will likely not be supported as outlined above. You can expect this to happen when legacy Edge comes to end of support next year. Like their previous flagship browser, IE, you can simply ignore it.
