Sharepoint document approval - select approver

Hello. I’m looking to implement a document approval process. I can see flows using the approval function in SharePoint. However, I require the user who is submitting the document for review and approval to be able to select the reviewer to whom they need to send the approval for the selected document. Alternatively, if I have a metadata column with a “reviewer” name on the document - is there a way I can have the approval flow look to that column when performing the approval flow. The reviewer will not always be their manager so the user submitting the document for approval needs to be able to somehow choose the approver on a document by document basis.
