Remove some projects from Source Control and add others

Visual Studio 2019. When I connect to Azure DevOps Source Control, I get a list of projects, I guess imported from some previous version of source control. Most of them I do not want under source control now. I took steps to remove one, and it became locked in as the ONLY project I could reference under source control, the exact opposite of what I wanted to achieve.

So, how do I successfully remove a project from source control?
AND how do I add a project TO source control? I wasn't able to do that either.

Also, I could not identify a suitable tag for this question, so I selected one at random. I would love to know the correct tag(s) for this question.
