Error displaying character "?" when sending mail

I use mail exchange and when sending the receiver the screen looks like this.
Who has encountered this error, please let me know how to handle it

    Good day.

    Could you tell me the language you use to write the message?
    And also are you using the desktop Outlook client or OWA? If so, what's the version?

    The idea is to change the Preferred encoding to UTF-8, it's in File > Options > Advanced > Preferred encoding for Outgoing messages.
