I've found the solution: set the preferred view, then close the dialog while holding CTRL. The new view will be applied to most folders but not all of them (probably only folders of the same content type).

How to change the default view of the "Open" dialog? I've already tried the "Apply to other folders" button from "Folder options", but it doesn't have any effect on the "Open" dialog.

You get different views for folders when you try to browse through out the computer, as the views for each type of folder is set different. There are 5 types of folder under which all the files are stored. You will need to set the same views for all the folder types to the same view to get a uniform view.
The different types of folders are: General items, Documents, Music, Pictures and Videos.
You may follow the steps given below and check if that helps.
1. Create a New Folder on the desktop.
2. Right click on it and select Properties
3. Go to Customize tab and under ‘What kind of folder do you want?’ select General items
4. Also, select the option which reads ‘Also apply this template to all subfolders’.
5. Apply the settings
6. Open the folder and make the required changes as to how you want the folder view
7. Go to Folder options and click on Apply to all folders. This will apply the settings for all the folders of the General items type.
Now you need to change the folder type to the rest of the options available i.e. Documents, Music, Pictures and Videos. Follow the same steps from step 2 for all the folder types and apply the settings and check if that accomplishes what you want to achieve.
