Sorry, due to lacking the Teams meeting room device in our environment, we could not test your situation. Maybe you could try to delete the device in Teams admin center by following these steps and re-add it to see if the display name could be changed:
- Go to Teams Devices > Teams Rooms on Windows and select the devices you want to remove.
- Select Remove.

The official document did not refer it will disconnect the device from AAD. So we assumed it will not affect the device connection from AAD.
