How to obtain Windows Server Client license when removing it from Host

Question

we are removing some of our server clients from our HyperV host. is there a way to obtain those licenses when we re-add them?
Reason we are doing this is some of our servers were compromised and we want to completely delete and re-add. However, we do not have the actual license key. This was setup by a MSP who is no longer managing our environment.

Assuming a DataCenter host you can use AVMA keys

if the host were Standard then you can simply use the host product key to activate guests.
