Not alot to go on here ive seen the other issue where it says to upgrade or clear the bios but the machines I'm doing this on are "brand new" computers they're dell OptiPlex 3080's so I didn't think it would be an out of date bios but hey maybe it is. Screenshot is the end of my bdd log. if more is required let me know. quick scan of my log doesn't seem like anything else is doing anything weird.

so I finally got around to trying that link and no dice I put the line SELECT * FROM Win32_ComputerSystem WHERE Model Like "%Dell OptiPlex 3080%" into my disk partition options and it ended up throwing an unable to find target disk or partition again. So I changed it back to select the disk and partition number and no dice it gave me the same error as before verify bcd boot ex

If we are using ADK 2004 with MDT build 8456, we have to download MDT_KB4564442.exe and replace some files follow below guidance, remember to update Deployment Share, choose completely regenerate the boot image.

try to rebuild and it gave me this error
i tried reinstalling the adk, winpe and still no dice on the error
i use the win 11 adk,pe so i assume there is not "patch" like some people refer to also this broke when I overwrite the x86,64 in the tools folders from before
tried making a fresh deployment share after as well and still didn't mount
Please try to close and restart the Deployment Workbench (MDT) by right click on Deployment Workbench and Run as Administrator, then retry update deployment share.
Also, we have to make sure there is no antivirus program blocking the access.
i had to run it as admin
replacing the files and rebuilding didnt help in the meantime I'm going to continue with a new deployment to see if I can get it to work
i got it to complete the OS install so I assume I got past the error of this post. All I did was remake the deployment share and copy over the settings I knew I was using.

After replacing the files for the MDT_KB4564442, and regenerating the boot images, ZTIGather was still setting isUEFI to true on non UEFI system.
I added the Secure Boot Cmdlets under the Windows PE Features, regenerated the the boot images again. Wrote a PS script to get a UEFI variable, and set the isUEFI variable.
Script credit goes to https://github.com/FriendsOfMDT/PSD, I borrowed from their gather script. Added the script to the Task sequence after the Preinstall gather step.
The one downside to this route is I have to add the Power Shell script to all existing and new Task Sequences.
