Where do you set the <Automatic> setting

I cannot figure out where you set what the <Automatic> setting for the Dial plan policy and Voice policy in the Skype for Business Control Panel. There are several options and the helpdesk has a lot more to worry about than making sure this is correct when they enable Enterprise voice for a user. I would really appreciate it if someone could point me in the correct direction.
