For privacy reason every time an employee leave the company we have to delete its user and relative mailboxes.
There is a way to edit the automatic message that Exchange use to warn the sender that the mail boxes doesn't exist anymore?
In italian the message is "xxx non è stato trovato in xxx.com" (english "xxx is not founded in xxx.com").

Before this policy for privacy reason (when the user of a former employee could be active) I set a mail flow rule "reject the message and include the explanation" but now this rule is ignored for obvious reason.

Simply assign his email address(es) to another object post deletion, a shared mailbox for example. You can then use either a mail flow rule to "reject the message and include the explanation" or Inbox rules to add a specific reply to each message received. Or even configure OOO replies.
