If you need to change your email address on your account page, you can follow the steps in this article to update the verification method: https://support.microsoft.com/en-us/account-billing/change-your-two-step-verification-method-and-settings-c801d5ad-e0fc-4711-94d5-33ad5d4630f7
You'll need to go to My Apps > click on your profile in the top right corner and select "View Account" > Security info. There you can change your default sign-in method.
If you cannot sign into your account page because of not receiving the sign in code, I'm sorry to say that forum engineers will not have access to get into your account to help with this and you will need to ask the admin of your organization for help resetting your authority information from the Help Desk.
If you are able to get into Instagram through a different MFA method, you can update the Authenticator settings there as well.
