If you're involved in the Windows Embedded Student Challenge you will be using an ICOP eBox reference board in your design - The box is an x86 based device that exposes serial, parallel, VGA, networking, 3xUSB ports, audio in/out - and has a BSP for Windows CE 5.0.
Some of the projects will probably need more than the existing connectivity options, perhaps digital I/O, or I2C bus - Here's a pretty neat solution, a board from OOPic that connects to your reference board over a serial connection and exposes a number of interfaces including I2C, Digital I/O, some switches, LEDs, LCD display connector, and speaker - all for $79!

Another option is the BrainStem at Acroname. It has the added advantage of providing a CE driver to provide a layer of abstraction between the application and serial command protocol.
