You cannot hide or edit this as far as I know.

Be aware that this time includes all the time the document is open before a save. This includes time the document was minimized.

In my opinion, this is really not a very meaningful number. The screenshot shows the editing time spent on a blank document I opened yesterday as > 800 minutes. Most of that time I was asleep. Note that there are no paragraphs or characters.

If you use File > Save As to a new name, the time will be reset.
