Based on your description, I understand that you have a concern with “Set the Teams version not to update automatically”.

In my understanding, there is currently no direct way to control Teams automatic update. The desktop client updates itself automatically. Teams desktop application checks for updates every few hours, downloads it (if there is any), and then wait for the Windows 10 to be idle before silently installing the update. I suggest that you post this concern on our Feedback page. Other people may vote it and it may be considered for future upgrades.
