There are several possible reasons why the Data Types option appears greyed out in Excel, kindly try these steps to help us narrow down the issue and see if it persists:
- Unsupported license or unsupported language.
- Go to File > Account in the Excel application and verify that your Office 365 subscription account is displayed under User Information.
- In Options > Language, set an authoring language such as English and move it to the top if needed; some environments reported Data Types enabling after language adjustments.

- Create a new worksheet or workbook to check whether the issue occurs across all files or only in a specific one. Sometimes, the problem is related to sheet configuration.
