I have been using the latest **Microsoft® Word for Microsoft 365 MSO (Version 2603 Build 16.0.19822.20086) 64-bit
We are still seeing the same issue. Can you please confirm whether it is fixed in particular version.**
A workaround can be to roll back to version 2511.
Do leave feedback, though.

After upgrading to version 2512 (build 16.0.19530) or later, it has been reported that users may experience issues with heading numbering disappearing when a Style Separator is used. This is a known problem that can affect how headings are displayed in documents, particularly when using specific formatting features like Style Separators.
To address this issue, users may need to check their document formatting settings or consider alternative methods for managing heading styles and numbering until a fix is provided in a future update.
