Windows defaults to 96 d.p.i. while macOS still assumes 72 d.p.i. You can change a Windows machine's resolution (though it doesn't look as good), but not a Mac's. All remote software runs on the same basic technology, so you could try different Mac clients to see if you can get a better result. I've used Chicken of the VNC with good results, but there are several others.
How can I change the display resolution of Microsoft Remote Desktop for MacOS?

Hi,
I am using the latest MacBook Pro M1 and need to do some work on a remote Windows machine (Windows Server 2019 Datacenter) and the graphics appear very small and sometimes packed together when using Microsoft Remote Desktop (MRD). I have tried changing the resolution in the App preferences but this does not solve the problem. Connecting to the Windows machine from a Windows client works fine and the display is also good. However I need to make this work when using MRD from a Mac.
Thank you in advance for your help!
Olivier
