yes, this new Linux account is normal behavior.
To secure Azure IoT Edge as good as possible, Microsoft also makes use of a specific user account, named iotedge:
I'm not sure if user accounts can be removed from the login screen user selection.
Azure IoT Edge devices are typically making use of Linux WITHOUT the graphical user interface. By proving just bash shell access, the device has a smaller installation footprint and needs fewer security updates so it is better maintainable over time. Most of these edge devices even come with a screen. Production devices are typically accessible by eg. SSH over a VPN.
I recommend using the graphical interface only for development/test devices so you can have more/other (visual) tools to control and test the device.
