Mine stopped syncing a few days ago as well. Turned out I was still using a now retired version of AADConnect.
Sign in to your "entra.microsoft . com" portal, https://entra.microsoft.com/#view/Microsoft_AAD_Connect_Provisioning/AADConnectMenuBlade/~/GetStarted
Then click Manage:
From there, download the Connect Sync Agent and run that on your AADSync server. It will do some automated updating after nexting threw a few screens. When prompted, sign in with your 365 admin creds and you should be syncing again.
