You use Xcode on the Mac to view the crash log. Currently there is no Visual Studio support.
How to check crash log sent by Apple review team for iOS .Net MAUI application.

We have developed an application using .Net MAUI in Visual Studio 2022 on Windows machine.
Application is working properly on android devices and also working on iPhone device.
We upload an application version on Apple App Store, but it was rejected with some crash logs.
We are looking for how to check those crash logs and identify issue in .Net MAUI Visual Studio 2022 on Windows Machine.
Please guide us to identify issue from crash logs.

Are the crash logs they provided not uncompleted? Could you see the logs from TestFlight on Apple developer connect portal?
Please guide us to identify issue from crash logs.

And it seems like you want to know how to get the full logs from Apple review team. If so, you can send message to them and ask for the detailed crash logs.
If you can reproduce the issue that they point out (in your physical device）, you could get the logs via VS.
Detailed steps: Open VS, connect your device with your mac, pair to mac, open
Device Logwindow on the toolbar.

2024-05-30T19:26:48.7+00:00 with Xcode you just open the crash file if you have a copy. you can use window->organizer to access crash files from the store.
