How do I update my security when it is all outdated?

The phone number, and email that I have for security information on my email account no longer exist. To change my security I need access to either email account or the phone number that No longer exist. How do I update my security information?

However, I want to confirm if you mean want to change the phone number and email address in security info as screenshot below.

Based on my experience and tests, you could change the phone number by answering a call without assistance of phone number that no longer exist, as well as the email address.
