I need to get the name of the SharePoint column that is responsible for informing that a file or folder was opened in the Sharepoint Library. I will use this information to create a flow in Power Automate to inform those responsible by email if someone accesses this file or folder in SharePoint. (Because there are people who are Sharepoint administrators who have access for support only, as these are confidential files). And those responsible have to know who accessed it and when, being notified.

I would recommend you to export SharePoint activity report. You could export data of all users file viewd or edited list in admin center. Please refer to following document

But unfortunately not for this specific case, because we are administrators of the Sharepoint site and what we need is something so that if we access something on this specific site, the members are notified, because these are confidential files. We need to have something to show who accessed it and whether the information was changed or viewed and which file. That's why I thought about going down this path of using something with the fields from the Sharepoint libraries. Now, if you have a report that provides this information and we can share it with the members of the site, that would also be helpful.
