As the restarting method can fix the issue. I want to put it as an answer.

I test on a MacBook Pro with macOS Catalina Version 10.15.6 and the issue happens after installing the latest update for Safari. I can fix the issue by restarting the machine. Test with Edge Stable 85.0.564.51.

    MacOS version = 10.15.6 Catalina
    Safari version = 14.0 (15610.1.28.1.9, 15610)

Yes I believe MSFT Edge is behaving strangely after the Safari browser was updated.

Indeed - restarting the MacBook Pro solves the Edge browser problem. Now it behaves as normal and the extensions all load properly. Thanks for the help.
