When I have two worksheets open and I copy information from one to another, when I undo a change in one, I undo the other one as well.
How to take it off?

If you copy values from worksheet A to worksheet B, then undo a previous change in worksheet A, the pasting data in worksheet B will be revoked.
As Dillon S suggested, there is no option to turn it off.
Based on my tests, if you open worksheet A in one Excel instance, and run excel /x
in Run dialog to open a new Excel instance, then open worksheet B, you can past the values and formats. (But the formulas can not be pasted.)
Under this case, you can undo a change in worksheet A, the pasting operation will not be effected.
